Zucchini Pancakes

Possibly the (one of) the easiest recipes ever.... Add other vegetables, spices (eg. fresh chillies, chilli powder, pepper etc) as you like

INGREDIENTS

1 zucchini
1-2 tbsp plain flour
1/2 tsp (or a pinch of) salt

METHOD

Grate the zucchini, sprinkle with salt and rest for 10-15 minutes or so
The salt will draw water out, leaving the zucchini more crunchy. If a lot of water seeps out, drain, otherwise leave it to form the base of pancake mix.
Add 1-2 tbsp flour, enough to form a small amount of thick batter (how much to add is up to you)
Fry approximately 1/4-1/3 cup at a time until golden brown on each side.
After the second flip, press down with the flat edge of a spatula to make them a bit more crispy.

Pretty good dipped in chilli sauce, sweet or regular
